You'll Need:
-Waffle Iron
-High Powered Blender
-1 3/4 cup your choice of milk (almond or whole for us, depending on the day)
-2 eggs (or two chia eggs if you're not doing eggs or if you just want added Omega-3s)
-1 teaspoon pure vanilla extract
-1 medium sized very ripe banana (the more ripe, the sweeter your waffles will be- think banana bread!)
-2 packed cup of greens (organic spinach or spring mix)
-2 cups Bob's Red Mill All Purpose Gluten Free Flour (or your favorite gluten free flour)
-1/2 tsp xanthan gum (omit if your flour already has xanthan gum in it!)
- 4 tsp gluten free baking powder
-1/4 tsp Real Salt
-Semi-sweet chocolate chips
1. In your high powered blender, add all your wet ingredients, including the banana and spinach.
2. While these are blending, turn your waffle maker on high to heat up.
3. Once thoroughly blended, add dry ingredients and blend again. (Do NOT add chocolate chips here)
4. (I do NOT ever use spray oils. Nitrous oxide, carbon dioxide, propane, n-butane and isobutane... no thanks!) Just pour mix over waffle iron and drop desired amount of chocolate chips one by one onto the waffle, making sure they're distributed evenly before closing the iron. They shouldn't stick if you have a non-stick waffle iron. If they do stick, use coconut oil!
5. Because of the spinach, you'll need to cook these until they're crisp on the outside. Often, the waffle maker dings "done" while they're still goopy on the inside... so they have to sit for extra time. let them get crispy!
