The Spinach lasagna that was one of our favorite things to ask our mom to make!
Yeilds two pans! Make both, and freeze one for later! :)
-Lasagna noodles
-2 bottles of a good red pasta sauce. (Ragu Simply traditional pasta sauce was really good! Also have the option to sneak some yummy veggies by making this a bechamel sauce. Cook down carrots, celery and onion until soft and blend into the red sauce)
-2 lbs ground beef
-mozzarella cheese
-parmasean cheese
-ricotta cheese
-cottage cheese
-fresh spinach
Instructions:
Preheat oven to 425°f.
Season pasta water with oil and salt and cook per pasta instructions.
Season ground beef with salt and brown.
Grease 9×13 dish.
Once pasta and ground beef are cooked, begin assembling lasagna in the casserole dish by following this pattern:
Layer Noodles, sauce, mozzarella, ground beef, cottage cheese, fresh spinach, ricotta cheese, parmasean cheese, repeat one and a half more times ending with noodles, sauce and mozzarella & parm cheese.
Bake loosely covered with tin foil at 425 until all cheeses are melted and spinach is wilted. Cook a few minutes without tinfoil to allow top cheese to brown and melt.
Remove from oven and allow to sit a few minutes so it isnt watery.
